/Asian Turkey Meatballs
After getting some only sorta clean chicken meatballs at Costco a few weeks ago I knew I needed to up my meal prep game and make a HUGE batch of my favorite turkey meatballs. When we were doing Whole 30 we started making this recipe as more of a stir-fry since we couldn't use a grain as a binder---and it was a lot quicker to just put it all in a pan!
But the meatballs are delish and still pretty simple....so I decided putting the time in was gonna be worth the yummy return!
Since they are Redd approved I decided that could confidently share the recipe with ya'll ;)
Asian Turkey Meatballs
Meatball Ingredients:
1/4 c gluten free oatmeal ground in blender
1 1/4 lbs of lean ground turkey {pic of brand I use below}
1 egg
1 TBSP minced ginger or 1 tsp powdered ginger
1 minced garlic clove {I used 1 TBSP of garlic olive oil instead so it was lower fodmap!}
1/2 tsp sea salt
1/4 c chopped fresh cilantro
3 chopped green onions
1 TBSP coconut aminos {can sub low sodium soy sauce}
2 tsp sesame oil
Directions:
Preheat oven to 500. Mix all ingredients in a large mixing bowl. Form into meatballs a little bigger than a golf ball. Bake for about 20 mins or until the edges are a little crispy brown and an internal temp of 165.
Dipping Sauce Ingredients:
3 TBSP coconut aminos {can sub low sodium soy sauce}
1 1/2 tsp sesame oil
2 TBSP fresh lime juice
1 1/2 TBSP water
1 TBSP chopped green onions
Combine all ingredients in a small mixing bowl. Enjoy on top of meatballs! We usually eat with zoodles but they are also yummy on top of rice and cauliflower rice!

Got this 3 pack at Costco and it was the perfect amount for me to triple the recipe!
